Make it Monday

Sorry that it's late...but better late than never right?!

I feel a little ill this week and ended up in the hospital for the better part of the weekend but that won't stop me!!

This pizza recipe is amazing. I make the dough up ahead of time and then freeze them. They take about 1 -2 hours to defrost a single pies worth.


Whole Wheat Pizza Dough
1 1/4 Cup All Purpose Flour
1 1/4 to 1 3/4 Cup Whole Wheat Flour
1 Package Active Dry Yeast
1 Cup Warm Water
2 T Oil Oil
1/2 t Salt

Makes 4 crusts (for small pizzas...or use for a larger pizza)

  1. In a large mixing bowl combine 1 1/4 Cup all purpose flour, yeast, and salt. Then add the warm water and oil. Beat with an electric mixer on low speed for 30 seconds, scrapping bowl as needed. Then increase speed to high for 3 more minutes.
  2. Add in whole wheat flour and stir with a wooden spoon (use as much flour as you can mix in.with spoon)
  3. Turn dough onto lightly floured surface. Knead in remaining flour to create a moderately stiff dough.
  4. Divide dough into 4 sections and cover for 10 minutes.
  5. Now its ready to use or freeze!



Roma Tomato, Basil & Mozzarella Mini Pizza
2 T Extra Virgin Olive Oil
1 ball of pizza dough (recipe above)
1 Pound fresh mozzarella cheese sliced
3 Cups sliced Roma Tomatoes
4 Cloves Garlic
1/4 Cup Chopped Fresh Basil


  1. Preheat oven to 400. Brush baking sheet with 2T Olive Oil and set aside. On a lightly floured surface roll dough into 9*6 inch rectangle transfer to baking sheet and fold edges up slightly. Brush dough with any remaining olive oil. Prick bottom of dough with fork in multiple areas. Bake dough for 20 minutes.
  2. Remove dough from oven. Top with cheese, tomatoes and garlic. Bake 5 to 7 minutes until the cheese melts. Remove from oven and top with basil and pepper if desired.
  3. ENJOY!!
